San Choy Bau is one of our favourite, easy – prep meals that the whole family loves. When I say easy-prep, I really mean it. The only challenge you may come across is not tearing the lettuce leaves when preparing them!

It’s origin is Chinese and means ‘lettuce wrap’, and what I truly love about it is the combination of nutrients and flavours that really satisfy. Its a high protein meal packed with vegetables & spices, making it perfect for any time of day.

This recipe uses 6 different vegetables, herbs, spices and healthy sauces that make it truly sensational. It’s a high fibre dish with prebiotics, protein, vitamins, minerals and anti- inflammatory properties.

Healthy San Choy Bau

Ingredients 

Serves 2 // 10 mins cook

500g Pork mince (alternatively chicken or turkey also works well)

1 Tbs Extra Virgin Olive Oil 

1 Cup Bean shoots

6 Large lettuce leaves (either Iceberg or Cos lettuce)

1 Small Carrot, grated

1 Small Zucchini, grated

1/2 Red Capsicum, diced

2cm of Leek, sliced and diced

2 Garlic cloves, minced

2cm Ginger, grated

2 Tbs Tamari sauce

2 Tbs Fish sauce

1/2 Lime, juiced

1/2 Avocado, diced (optional)

 

Rinse and arrange 6 lettuce on a serving plate.

In a large pan on med-high heat, add oil and cook mince until it changes colour (approx 3 mins). Add diced leek, garlic and ginger and blend with the mince (approx 1 min)

Add carrot, zucchini and red capsicum to the pan, and blend with the meat, herbs and spices (approx 2-3 mins).

Add tamari. lime juice and fish sauces to the pan and stir them in. Then add bean shoots on top with one last stir in the pan before serving.

Fill your lettuce cups with scoops of the mince and veggies, top with avocado (optional) and enjoy.
