Perfect Paleo Porridge

When you’re looking for a healthy, light but very satisfying breakfast before a busy day or morning work – out, give this baby a whirl and you’ll never be sorry!

It’s the perfect combination of filling- yet – light, gluten- free quinoa flakes, also high in protein, plus a good serving of mineral -rich seeds,  a touch of healthy sweetness and essential fats that make it a balanced and energy – promoting meal.

Takes less than 6 minutes to prepare and leftovers can be stored for days, with multiple variations on serving. Gluten Free, can be prepared Dairy Free and Refined Sugar Free. More information below :

 

Perfect Porridge recipe

 4 – 8 serves

1 Cup Quinoa flakes, cooked

1/2 Cup Sesame seeds

1/2 Cup Pepitas (pumpkin seeds)Three seed mixture of Pumpkin, sunflower and sesame seeds isolated on white.

1/2 Cup Sunflower seeds

1 Tbsp Chai seeds

2 Tbsp Goji Berries or Sultanas (optional)

1 Cup Desiccated coconut

1/2 Cup Oil  – Olive oil, Coconut oil or Butter  work best (avoid butter for dairy free option)

5 Tbsp Raw honey or Brown rice syrup ( *for fructose free)

1 tsp Gound cinnamon

1 tsp Vanilla bean seeds or extract

 

Method :

Cook flaked quinoa in a pan on medium heat using enough water to cover the flakes and allowing to boil. Flakes will cook in approx. 3 mins and soak most of the water. Remove excess water, rinse under cool water and place aside.

In a pan on medium heat thinly coated with oil, add seeds and coconut to lightly toast – stir continuously for 2-3 mins to achieve this. Remove from heat and place seed mix in a large bowl, add cooked quinoa and combine.

In another pan, add the butter/oil, vanilla, honey/syrup and cinnamon on low heat and stir until combined. Savour the smell!! Remove the pan from heat and add to your bowl with other ingredients. Mix together to combine.

Serve 1/2 cup of porridge to suit your taste – we’ve tried on it’s own, with a dash of milk and also with a dollop of yoghurt. Perfect every way!

Store – refrigerate in an airtight container for up to 5 days, or can be frozen for up to 1 month.
