FUDGE! Sweet, tasty and healthy – completely satisfies a craving and loved by all ages. This recipe is a low sugar, grain- free, fruit free, raw delight that my super talented foodie friend created and shared recently. Based on almond meal, cacao butter, cacao and coconut cream it reeeeally is the fudge bomb. You’ll also find a nut-free version below the original (also fruit free, df, gf and low sugar), for our allergy free friends and lunchbox- friendly snacks.
Chocolate Fudge
High protein, healthy fats, low sugar
Prep. 10 mins // Freeze 1 hour // Makes 24 pieces
Ingredients :
1/3 Cup Coconut Oil
1/2 Cup Coconut Cream
75g (approx. 1/3 Cup) Cacao Butter
1/3 Cup Cacao
2 – 3 Tbs Sweetener (eg Honey, Rice Malt Syrup, Maple Syrup)
1 tsp Pure Vanilla
Optional extras – 1/2 Cup chopped walnuts &/or dried fruits
Melt the cacao butter in a saucepan over low heat; add cacao, sweetener and vanilla and stir until combined. Remove from heat and let stand. Place all other ingredients into a processor or blender, and pulse until combined.
Add the saucepan of chocolate to the processor and combine on slow pulse. Once combined, add your extras and gently mix in with a spoon.
Line a small loaf tin and pour the mixture in, flattening and spreading to fill the tin. Cover and freeze for up to 1 hours, or until firm. Slice and serve immediately, keeping any remaining covered in the fridge.
