Strawberry, Spinach & Feta Salad with Poppyseed Dressing
Serves 4 / 15 mins preparation
Ingredients :
Salad ~
4 Cups Baby Spinach, rinsed
2 Cups Strawberries, rinsed, hulled & sliced
1 Avocado, peeled, pitted and diced
Half a Red Onion, thinly sliced
Optional –
1/4 Cup of Pine Nuts or Almond Slivers (toasted) & 1/4 Cup Goats Cheese Feta, crumbled
Olive Oil & Poppy Seed Dressing ~
1/3 Cup Extra Virgin Olive Oil
3 Tablespoons Apple Cider Vinegar
2 Tablespoons Honey or Rice Malt Syrup
1 Tablespoon Poppy Seeds
Shake of salt & pepper to taste
Method :
Place all salad ingredients together in a bowl and combine. Place all of the dressing ingredients in a small separate bowl and whisk until combined. Add the desired amount of dressing to your salad and serve immediately.
