Here’s another easy to make and very versatile favourite recipe of ours, using only a few ingredients with no baking required and particularly loved during the hot summer months.
Depending on the serve size of bite, it makes a small meal or snack and is filled with proteins, healthy fats, gut loving fibres & vitamins that’ll keep energy levels steady and strong, while nourishing you from top to toe.
The cereal used is a homemade blend of whatever I have on hand. The cream is either yoghurt or kefir. Ratio is 1:1. Its that easy!
My homemade cereal often includes:
- 1/2 Cup of activated Buckinis (buckwheat granuals)
- 1/2 Cup of Quinoa Flakes or Rolled Oats, toasted
- 2 Tbs Pepitas
- 2 Tbs Hemp Seeds
- 1 Tbs Goji Berries
- 1/2 tsp ground Cinnamon
This makes approx 1 .5 cups of cereal, therefore I add 1.5 Cups of greek yoghurt or kefir to make the base. Makes approx 5 medium bites or 8 – 10 small bites.
Place the cereral and yoghurt in a large bowl and blend well.
Using silicone muffin moulds, scoop the mixture in and place a berry on top (optional)
Once you’ve filled the muffin moulds, place them on a tray and into the freezer. Set them for a minimum of 30 mins.
If you prefer eating them frozen, keep them in an airtight container in the freezer for up to 2 months. If you prefer them cold, place in an airtight container in the fridge for up to 1 week.
