Coconut, Lime & Chocolate Bites (no bake, gf, df)

These tasty bites are so satisfying, refreshing, versatile & uber healthy. They’re a summer taste savior combining lime, coconut and a touch of dark chocolate. Plus they’re ‘no -bake’! You simply can’t go wrong with mixing raw Fresh Lime Juice, Coconut and one of my kitchen favourites, Hemp Seeds, then dipping into Dark Chocolate.

Did I mentioned the bites are incredibly easy to make too?

All you need is 1 bowl (food processor) to mix, 1 bowl to melt the choc for dipping , 8 ingredients in total & 10 -20 mins in the freezer for setting.

These are my one -handed, nutritious, energizing, easy-prep, go-to snacks ATM. Great to munch on the go, a treat for kids and to offer as a little snack for guests popping in. Less adjectives now and onto the recipe 😉 ~

Fresh Lime, Coconut & Chocolate Bites

No bake, GF, DF, EF

Makes approx 20 med cookie-sized bites or 30 balls.
Ingredients:

Hulled Hemp
‘Hulled Hemp Seeds’

1/2 Cup Hulled Hemp Seeds

1 Cup Quinoa Flakes

1 Cup Almond Flour/Meal

3 Limes, Juiced

1 Cup Shredded/Desiccated Coconut

1/2 Cup Coconut Flour

1/2 Cup Maple Syrup/Honey or RMS*

100g Dark Chocolate (min 70% cocoa)

Add all of the ingredients, apart from the chocolate, to your food processor and pulse until well combined. The ‘dough’ should be fine crumbs, but able to stick together when pressed.

Roll the mixture into balls or into flattened cookie-size bites & place on lined baking tray.

Melt 100g of dark chocolate in separate bowl, by placing the bowl above steaming water for a gentle melt without burning.

Dip half of the bites or all of the balls into the melted chocolate and place them back onto the tray before  into the freeze for apprx 10 mins. Once they’re set, keep them cool in fridge before serving 🍫🌱
