Best GF Pizza Base

If you’re looking for a great tasting, grain free pizza base recipe, this is the best we’ve ever tried. I’m far from ashamed to say we eat it a lot and have done so for years (I’m a mum of 2 young kids ), especially when the temperature drops. It’s very nutritious and satisfies everyone’s appetites – including the young cubs who request it the most.

Using kale & zucchini in the base makes this so incredible good and we add greens with the topping too! Each bite delivers serves of wholesome vegetables & if you’re looking to reduce your complex carb intake without ditching pizza, this recipe is your answer.

As a nutritionist I’ll say the best part is that it’s very nutritious; high protein, healthy fats with antioxidant -rich veggies. As a busy mum I’ll say the best part is the 1 bowl, 5 min prep time that delivers a great family meal.

Best GF Pizza Base

Ingredients 

1 Cup (approx. 1 large handful) of fresh Kale leaves
1 Zucchini, quartered
2 Cups Almond Meal

1 Egg

1-2 Tbs Olive Oil, Melted Butter or Ghee
1/4 tsp Baking Powder
3/4 Cup Cheese, grated (optional)
1 handful of Fresh Basil (optional)

Preheat oven at 200C (390F) and line a pizza tray.
Add Kale & Zucchini into the food processor and pulse until finely chopped.
Add the remainder of ingredients, using only 1 Tbs of Oil, into the processor and pulse until well combined.
If the mixture seems dry, add another 1 Tbs of Oil and pulse again until combined.

The mixture should be wet, not dry, and stick together when a handful is collected.
Using a large spoon, scoop the mixture onto your lined pizza in the centre.
Using hands, gently spread the mixture to the outer edges of the pizza tray to form the round base.
The base doesn’t need to be perfectly shaped or flattened, but it’s best if it covers the tray to the edges.    

Bake for approx 20 – 30 mins, until it is firm and golden colour.
Add topping and place it back into the oven for approx 15 mins before serving.

Baked pizza base (without topping) can be frozen and any leftovers make a great lunchbox snack!
