Hooly dooly, we’re only a few weeks shy of December and there’s already a heatwave! Any recipe involving a freezer is our friend 🙂 This delicious Raw Choc Vanilla Matcha Slice is gold – it’s low sugar, high protein, rich in antioxidants and minerals; will cool you down and completely satisfy your sweet tooth.
Also incredibly easy to make needing only a few ingredients, 10 minutes preparation and a freezer.
There are 3 easy layers to make, all listed below; what you’ll need is ~
Baking Tin lined with baking paper and cling wrap.
Base Ingredients :
1/2 Cup desiccated Coconut
1 Tbs Coconut Oil
1 Tbs Honey
1 tsp Vanilla Extract
Blend all of the Base ingredients together for approx. 2 mins and press the crumbly mixtures into tin, covering the bottom of the tin. Cover with cling wrap and freeze.
Give the processor a quick wipe and begin to make the middle layer.
Middle Ingredients:
1/2 Cup Coconut
1 level tsp Matcha Powder
1 Tbs Coconut Oil
1 Tbs Honey
Blend all of these ingredients together for approx. 1 min, until it resembles fine crumbs. Remove tin from freezer to press the middle layer on top of base layer. Cover and place back in the freezer while you make the topping!
Top choc layer:
You’ll need a saucepan with boiling water and a bowl placed on top.
1 square of 80% cacao chocolate
2 Tbs Raw Cacao Powder
2 Tbs Coconut Oil
1 Tbs Honey
1/2 tsp Vanilla Extract
Shake of Ground Cinnamon
Add the chocolate, cacao and coconut oil in the bowl over boiling water and gentle stir until combined. Add the honey, vanilla and cinnamon, stir for approx. 10 seconds and remove from heat (saucepan top). Let the bowl stand for 3-5 mins on the bench, remove tin from the freezer and pour on the chocolate topping.
Cover the tin and place into the freezer for the final time, leaving it to set for a minimum of 1 hour. Once the slice has set, cut into squares and keep refrigerated until serving.
