BBQ Chicken & Avocado Rice Paper Rolls

INGREDIENTS
- 6 rice paper roll sheets
- 1 Cup of BBQ Chicken flesh
- 1 avocado
- 1 carrot
- 1 cucumber
- ½ bunch mint (optional)
Dipping Sauce
- 1 tablespoon lime juice
- 1 tablespoon maple syrup
- 1 tablespoon tamari
- ¼ teaspoon chilli flakes (optional)
Method
- Prepare the chicken into small pieces or strips
- Wash & cut vegetables into long strips
- Wash & pick mint off the stalk
- Combine all ingredients to make dipping sauce
- Place warm water into a bowl
- Submerge a rice paper roll sheet, one at a time, into the bowl of water for 1 min
- Transfer to a tea towel on a board & allow to soften/dry for up to 20 secs
- Layer ingredients onto rice paper roll sheet, starting closest to you
- Roll halfway along rice paper sheet, tuck in the sides & continue to roll
- Repeat the process with other sheets & serve with dipping sauce
*Store remaining fresh rolls in an airtight container in the fridge for up to 1 day
