Perfect Patties

Perfect Patties are delicious bite and are basically a blend of any meat, veggies, cheese, breadcrumbs + an egg, scooped into a rounded shape and shallow fried. They are so versatile and work well with a variety of flavours and fillings. Below you’ll find the recipe for 2 of our ‘go-to’ patties : Salmon & Veggie + Chicken & Veggie. Healthy meals aren’t boring and they can be so easy too, hope you enjoy these as much as we do!

Salmon and Veggie Pattie

1 Cup Zucchini (1/2 med sized), grated

1/4 Cup Baby Spinach, finely chopped

Salmon Patties w/ wilted greens, beetroot & ginger sauerkraut + avocado

1 Egg

1 can of Wild Salmon with bones in water (105g)

3/4 Cup Cheese, grated

1/4 Cup Breadcrumbs

Method : 

In a large bowl, place the full contents of salmon tin and mash with a fork until bones are softened and salmon flakes are blended.

Then add the egg and whisk it with the salmon. Then add zucchini, baby spinach, cheese and breadcrumbs and combine well. The mixture should stick together when scooped.

Heat your fry pan on medium with good quality oil (we use Extra Virgin Olive Oil or Ghee)

Using a dessert spoon, scoop the mixture and place on the fry pan, flattening it with the back of the spoon. Cook on each side for approx 3 – 5 mins or until golden brown and a firm pattie has formed. Continue to do this until all the mixture is used.

Serve immediately or store in an airtight container, this tastes great warm or cooled. Try them on their own or served on a bed of crisp salad.

 

Chicken and Veggie Patties

1 Cup Zucchini (1/2 med sized), chopped

1/4 Cup Baby Spinach, finely chopped

1 Egg

Chicken Patties w/ cucumber, avocado, evoo & lime salsa

Approx 175g minced Chicken (1/3 of a 500g packet)

3/4 Cup Cheese, grated

1/4 Cup Breadcrumbs + extra for rolling

Method : 

In a blender or food processor, place all of the ingredients in (exc. extra breadcrumbs) and blend until well combined.

In a small bowl, place extra breadcrumbs.

Heat your fry pan on medium with good quality oil (we use Extra Virgin Olive Oil or Ghee)

Using a dessert spoon, scoop the mixture and roll it into the breadcrumbs before placing it on the fry pan, flattening it with the back of your spoon. Cook on each side for approx  5 mins or until golden brown and a firm pattie has formed. Continue to do this until all the mixture is used.

Serve immediately or store in an airtight container, these tastes great warm or cooled. Served as is or on a bed of salad, wilted greens or fresh cucumber and avocado salsa.
