3 wholesome, everyday – ingredients blended to make a pancake. Brilliant!
Using eggs, bananas and coconut flour ; it delivers a protein, vitamin & mineral, fibre -rich bite that’s perfect for any time of day. Because it takes less than 5 minutes to make and provides fantastic fuel, we often start our day with it – but we also enjoy as an afternoon or pre-workout snack.
To make 1 Medium or 2 Small Pancakes, you’ll need
1 Tbsp Coconut Oil or Butter to line the fry pan
- 1 Large Egg
- 1/2 Medium Banana
- 1 Tbsp of Coconut Flour
- 2 Large Eggs
- 1 Medium Banana
- 1.5 Tbsp Coconut Flour
On medium heat, add oil to your fry pan
In a bowl, mash the banana with a fork. Then add the egg/s and whisk well until blended and bubbles have formed.
Add in the coconut flour and combine well.
Pour and scrape the mixture from bowl onto the fry pan into a circle shape (using a fork to spread the mixture and shape it in the pan) and cook for approx 2 mins on each side, or until golden brown.
Serve immediately with your favourite topping.
