Delicious and too easy to make, 4 ingredients, no baking required. Perfect sweet, nut free, grain free, low sugar finger food and healthy sweet treat. Merry, Merry Christmas x
2 Cups Desiccated Coconut
3 Tbsp Coconut Oil
1 Tbsp honey or rice malt syrup
½ tsp Natural Vanilla Extract
Place all ingredients into the processor and pulse until combined and sticking together.
Using a loaf/lamington tin lined with baking paper (greaseproof paper), press the mixture into the tin and cover with cling wrap (cling film) . Place into the fridge to set for minimum of 2 hours.
Remove from fridge and take Coconut White Christmas onto a clean chopping board. Using a sharp knife, cut into squares or rectangles before serving.
Can be served immediately, stored in an airtight container for up to 1 week or in the freezer for up to 1 month.
