If over ripe avocado can make chocolate mousse, it can easily make delicious cake too. Filled with vitamins, minerals, fibres & healthy fats to keep you satisfied & energised, you can’t go past this flour free Chocolate Avocado Cake recipe.
Avocados, almond meal & raw cacao powder are the cake base.
Its a very easy preparation, 1 bowl recipe – we hope you love it too!
Ingredients :
Makes 12 mini cakes
1 Avocado flesh (approx 1/2 Cup)
1/3 Cup Almond Meal
1/3 Cup Raw Cacao Powder
1/4 Cup Maple Syrup or Raw Honey
2 tsp Vanilla Extract
1/2 tsp Baking Soda
1/2 Cup of Milk chocolate chips or sultanas
Method :
Preheat the oven to 180C
Using your food processor or blender, add avocado + honey + vanilla and blend in into a paste
Then add almond meal, cacao, baking soda and blend well. Use a spoon to scrap sides of bowl or blender as you go.
Finally add the choc chips or sultanas and mix on low (to stir them in, not to blend / chop them)
Using a dessert spoon dipped in oil (olive or coconut oil works best), scoop mixture into mini muffin cases and place them on a baking tray
Bake for 13 – 15 mins until firm to touch
Remove and place on a tray to cool for approx 10 mins before serving
For the extra ‘fudge’ texture, place them in the fridge before serving
Leftovers will store in the fridge for 3 days
